My chop salad recipe and must have kitchen tools!

“What’s for dinner?” and “there’s no food in the house,” are the two most common sentences uttered out of my families mouths when it comes to food. It isn’t that we don’t have food it’s just that my kids and husband aren’t willing to take the time to put something together! Can anyone relate?? Well, I have found an easy solution to this problem, with simple ingredients, a little prep and forward thinking the whole family can get a customized salad in minutes! The key to making a fast chopped salad is

#1 Veggies in the fridge #2 Proteins already cooked and #3 A favorite salad dressing.

I love to cook chicken breast on Sunday and shop for my veggies once a week. When I’m ready to throw together a salad I grab my whole veggies, chunk them up into large pieces using my Sharp Pebble Chef’s Knife and throw them along with my chicken into a bowl. I love this Mixing Bowl by Kukpo. It offers a nice grip on the handle and bottom, making it the perfect moxing bowl for any baking or mixing needs!  The magic comes when you use double bladed kitchen sheers to chop it all into small pieces in a matter of 2 minutes. Finally add your dressing. I love addidng Garlic Expressions Classic Vinaigrette Salad Dressing because it adds tons of flavor and healthy fats.  Add any crunchy toppings you like and toss for a filling, high protein, low calorie snack or dinner. Some variations with leftovers that I enjoy is taco salad when I have taco meat and ‘hamburgers in a bowl’, mix all things veggie that would typically go on a hamburger (lettuce, tomato, onion, pickle, bacon) then throw in a leftover hamburger patty from the grill.
